Delicious and comforting fall favorite!
Toss the apples in a bowl with the lemon juice to stop them from browning. Set aside.
In a bowl, combine the flaxseed and water, whisk together and set aside for about 5-10 minutes until it thickens. Stir in the melted butter and milk until combined.
Sift the flour, baking powder, spices, and salt into a large bowl. Add the sugar and lemon zest, then pour in the wet mixture and stir well to create a thick batter. Add the apples to the batter, reserving the lemon juice. Mix to combine, then place the batter in the fridge for 20-30 minutes.
Pour 2-3 inches of vegetable oil into a large, wide pan and place over medium-high heat until the oil reaches 365°F. I use a cook's thermometer to check the temperature; if you don't have one, carefully drop in a small amount of batter: it should immediately sizzle and turn golden brown.
Once the oil is hot, add the batter, a heaping tablespoon at a time; do not crowd the pan. Fry undisturbed for 1-2 minutes, then carefully flip and fry the other side until golden brown. Using a slotted spoon, transfer to a wire rack to drain. Repeat until all the batter is cooked. Leave the fritters to cool for 10-15 minutes.
Meanwhile, in a bowl, whisk the confectioners' sugar with the reserved lemon juice until it's slightly thickened and glossy. Pour over the fritters; leave to set for a few minutes before serving.
